Peach Syrup

2 fresh peaches, chopped up (don't make them all pretty with slices the same size, you want some to be chunky and some to be melted into the syrup)
2-3 tbl butter
2 cups real maple syrup.  Not table syrup or any of that other crap, the real made in Vermont of Montreal deal.
dash each of cinnamon and nutmeg

Melt the butter in a small saute pan over medium heat while you are chopping up your peaches.  Add the peaches, cinnamon and nutmeg to the pan and don't poke at it too much as you caramelize the peaches just a bit.  When the peaches are soft and have a few browned bits, add in the maple syrup.  Let it start to boil then turn it down a bit and cook it at a simmer for at least 10 and up to 20 mins.
 
I serve this with my Sort of Fried Chicken Breasts over waffles. It would be equally awesome over pancakes or french toast with some sort of breakfast meat/meat sub/scrambled eggs, or cooled and served over plain greek yogurt/skyre with nuts or granola.  I do not have my own recipe for waffles, just use your favorite buttermilk waffle recipe and add a splash of cinnamon to make it go perfectly with the syrup.
