Beans and Greens

This one is a guest recipe from my dad ^^

Full Meal Beans & Greens

2 bags baby spinach (or any spinach, I like the baby leaves)
1 lb. hot italian sausage, loose or broken up
hot pepper flakes1/2-1 cup chicken broth
lots of your best extra v. olive oil, the stuff you save for salads
kosher salt
fresh ground pepper
1 big can Cannilini beans
sweet onion, sliced thin
garlic if you like it

1/4 cup or more olive oil in high-sided saute pan, get hot, add sausage, hot pepper flakes and onion and brown it up on medium heat. When browned nicely, add spinach a bag at a time, add garlic, wilt spinach nicely by turning in hot oil. Add beans and 1/2 cup of broth. If it does not look saucy enough for you, add rest of broth. Bring up to nice simmer, add some more fresh olive oil, eat with crusty bread to soak up the great oily broth.
