This recipe collection has evolved from: "Oh, shit, we have surprise dinner guests, again!" to "I just got home from work and am starving, tired, and I don't want pizza" to "how do I make this food I want keto friendly" to "what can I bring for lunch this week so I don't eat junk". Still not sure where it will end up next. Some of it manages to be fancy anyway in spite of this, because fooling people into thinking you've been slaving over dinner is half the fun. I don't just cook one 'style' of food so please don't let the juxtaposition of say, latin next to indian, surprise you; and don't be alarmed by the fact I play fast and loose with authenticity and can never leave well enough alone. I simply cook what I like to eat. My general recipe formulation tactic is "Eat something interesting, read 4-8 existing recipes for it, see what my grocery store has to work with, combine those recipes in my head and go." I also barely measure anything, ever, so really just consider measurements to be suggestions lol. Enjoy ^-^
